From the hills of Nariño comes a coffee that captures the spirit of experimentation. Juan Pablo Argote, working alongside his father Efraín, applies advanced fermentation techniques with complete creative freedom. The result is a cup of striking aromatic intensity, layered sweetness, and a texture that feels both rich and refined.

Processing
This microlot underwent a two-stage extended fermentation. First, whole cherries were placed in sealed tanks for eight days of lactic anaerobic fermentation, creating a foundation of brightness and acidity. After depulping, the coffee entered a secondary 15-day alcoholic fermentation, during which yeasts converted sugars into complex aromatic compounds. This sequential approach amplifies fruit intensity, builds depth, and generates the syrupy body that defines this lot.

Taste Profile
The fragrance opens with high-toned citrus and floral notes—lime zest and jasmine— that immediately signal the precision of the fermentation. On the palate, a concentrated sweetness evokes raspberry candy, carrying through with vibrancy and clarity. A rounded, mellow body reminiscent of maple syrup balances the structure, leaving a lingering finish that is both indulgent and dynamic.

Brew Guide

We highly recommend trying this coffee with the Flower Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.

  • Coffee: 18 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
  • Water: 300 grams (92°C)
  • Brewing Ratio: 1:16.6
  1. Rinse the filter thoroughly with hot water.
  2. Start the timer and gently pour 30 grams of water over 30 seconds.
  3. At 30 seconds, pour in a circular motion until you reach 110 grams.
  4. At 1:00, continue pouring until you reach 170 grams.
  5. At 1:30, pour until you reach 240 grams.
  6. At 2:00, gently pour in a circular motion until 300 grams, avoiding any agitation. 

The total brewing duration should be between 2:40 and 3:00 minutes.

Returns

Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.

Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.

If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.

*To be eligible for a return, the item must be unused and in the same condition as received, including its original packaging.

The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.

For other reasons, the buyer is responsible for returning the product at their expense.
