Exclusive microlot: nutmeg aromatics, papaya sweetness, and a Darjeeling-soft body.
From the high slopes of Nariño, this microlot is the result of Argote family innovation and a close collaboration with Shokunin. By applying scientific precision to fermentation, Juan Pablo Argote transforms the Castillo variety into a coffee with remarkable aromatic depth, layered sweetness, and a refined, tea-like body.
Processing
This lot was depulped and subjected to an eight-day lactic anaerobic fermentation. The process included the careful addition of 2% salt, guiding the microbial environment toward lactic acid bacteria and stabilizing the fermentation curve. Fermentation was monitored until reaching a pH of 3.6, at which point the coffee was washed and dried. This controlled approach yields clarity and structure, while enhancing the complex aromatic spectrum that defines this microlot.
Taste Profile
The cup opens with dense aromatic layers of nutmeg and jasmine, a combination that feels both warm and floral. On the palate, a mellow, tropical sweetness emerges—papaya and banana at the forefront— carried by a light, tea-like body reminiscent of Darjeeling. The result is a coffee that balances spice, fruit, and florality with precision and elegance.
