This coffee from Finca España captures the quiet confidence of experienced production rather than deliberate experimentation. Sourced from the highlands of Apaneca and produced by third-generation farmer Nora Lemus De Díaz Nuila, it showcases how thoughtful anaerobic processing can amplify clarity, sweetness, and structure without overpowering the coffee’s natural character.
Processing
This lot is produced using an anaerobic natural process, where whole coffee cherries are sealed in fermentation tanks without oxygen. During fermentation, controlled microbial activity transforms sugars and organic acids within the cherry, enhancing aromatic intensity and fruit definition. After fermentation, the cherries are dried intact, allowing gradual sugar migration from the fruit into the seed. This approach results in heightened sweetness, rounded acidity, and a cohesive, polished cup profile.
Taste Profile
The aroma is expressive and clean, led by fresh citrus tones reminiscent of orange peel. On the palate, the coffee delivers a juicy, fruit-driven sweetness with blueberry-like character, supported by a gentle, balanced acidity. As the cup cools, a smooth butterscotch-like richness emerges, lending depth and softness to the overall structure. The body is rounded and silky, with a lingering finish that remains sweet and composed.

Brew Guide
We highly recommend trying this coffee with the Flower Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.
- Coffee: 18 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
- Water: 300 grams (92°C)
- Brewing Ratio: 1:16.6
- Rinse the filter thoroughly with hot water.
- Start the timer and gently pour 30 grams of water over 30 seconds.
- At 30 seconds, pour in a circular motion until you reach 110 grams.
- At 1:00, continue pouring until you reach 170 grams.
- At 1:30, pour until you reach 240 grams.
- At 2:00, gently pour in a circular motion until 300 grams, avoiding any agitation.
The total brewing duration should be between 2:40 and 3:00 minutes.

Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.
Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.
If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.

The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.
