From the highlands of northern Thailand, these beans showcase the ambition of a new generation of coffee growers in Mae Chedi. By combining local varieties with experimental processing, they deliver a cup that balances vibrant aromatics with a round, textural sweetness.
Processing
This lot undergoes anaerobic white honey processing. After selection, the cherries are fermented in sealed, oxygen-free tanks to encourage the development of bright, fruit-forward characteristics. Following fermentation, the mucilage is left partially intact during drying, a defining feature of honey processing that enhances sweetness. The result is a complex but also clean profile, achieved through precise control at every stage of production.
Taste Profile
The cup opens with bright, high-toned aromatics reminiscent of lemongrass, followed by a juicy, tropical sweetness evocative of pineapple. A smooth, creamy body rounds out the experience, with a texture comparable to marshmallow. The interplay of brightness and sweetness makes this coffee both refreshing and indulgent, with a refined finish that lingers softly.

Brew Guide
We highly recommend trying this coffee with the Flower Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.
- Coffee: 18 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
- Water: 300 grams (92°C)
- Brewing Ratio: 1:16.6
- Rinse the filter thoroughly with hot water.
- Start the timer and gently pour 30 grams of water over 30 seconds.
- At 30 seconds, pour in a circular motion until you reach 110 grams.
- At 1:00, continue pouring until you reach 170 grams.
- At 1:30, pour until you reach 240 grams.
- At 2:00, gently pour in a circular motion until 300 grams, avoiding any agitation.
The total brewing duration should be between 2:40 and 3:00 minutes.

Returns
Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.
Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.
If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.
*To be eligible for a return, the item must be unused and in the same condition as received, including its original packaging.
The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.
For other reasons, the buyer is responsible for returning the product at their expense.
