Tropical Fruits From Bold Raspberry to Sweet Mango

A vibrant, tropical cup with raspberry, granadilla, and creamy mango notes, enhanced by extended fermentation for clarity and a sweet, smooth finish.

Marlon is a third-generation coffee farmer who made a significant career shift from commercial pilot to coffee producer, alongside his family. In 2024, he earned recognition by winning the Colombian Cup Taster Championship.

His family-operated farm, La Reserva, is situated in the municipality of Pitalito in Huila, Colombia. Marlon works closely with his uncles to cultivate premium coffee varieties, including Gesha, Bourbon, Pacamara, and Sidra. Drawing on the expertise of his uncles and his own specialized training in coffee cupping, production, and sales, Marlon has developed a product that consistently meets the highest global quality standards.

Processing

The process begins with the careful selection of fully ripe cherries, which are floated upon arrival to remove any defective or underripe fruit. A disinfection step follows to minimize microbial interference, after which the cherries undergo an initial 48-hour sealed fermentation in tanks equipped with one-way valves to regulate pressure.

Following this stage, the cherries are pulped, and the mucilage is intentionally retained for a secondary fermentation phase. The parchment coffee is then transferred to sealed tanks for an additional 88 to 90 hours. During this stage, lactic acid bacteria are introduced, and an immersion fermentation is conducted to develop complexity and enhance the coffee’s sensory attributes.

Throughout the fermentation process, pH and Brix levels are closely monitored to ensure consistency and quality control. Once fermentation is complete, the coffee is gently washed at ambient temperature and then dried slowly on raised African beds for 12 to 20 days (typically around 15 days), with regular turning to ensure even drying.

Taste Profile
This coffee delivers a tropical and juicy cup, bursting with vibrant fruit character. Bright, tangy raspberry leads the way, followed by the sweet, floral essence of granadilla, and finishing with a smooth, creamy mango sweetness. The extended dual-phase fermentation — including lactic acid inoculation and immersion — enhances clarity and complexity, amplifying the coffee’s natural fruitiness while preserving a clean, structured cup. The result is a lively mouthfeel with a tropical twist and a long, sweet aftertaste.

Brew Guide

We highly recommend trying this coffee with the Flower Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.

  • Coffee: 18 grams (Coarse, K-Ultra: 8.8°; J-Ultra: 310°)
  • Water: 250-260 grams (92°C, 65°C)
  • Brewing Ratio: 1:14
  1. Rinse the filter thoroughly with hot water.
  2. Start the timer and slowly pour 90 grams of water over 10 seconds.
  3. Stir 10 times right away to release the aroma.
  4. Wait until the timer reaches 1:00.
  5. At 1:00, continue pouring until you reach 150 grams.
  6. At 1:40, pour until you reach 250 grams, at 65°C.
  7. Complete the extraction by 2:20.

The total brewing duration should be between 2:00 and 2:20 minutes.

Returns

Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.

Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.

If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.

The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.

For other reasons, the buyer is responsible for returning the product at their expense.
