Mr. Mamoru Taguchi 田口護.
Because of his in-depth research on coffee theory, Mr. Taguchi is known as the "the legend of roaster" in the Japanese coffee world. If there is a coffee course, then the theory taught must come from Mr. Taguchi, and the textbook used must be his book. A few months ago, we bought a few of his books from overseas and have benefited a lot from reading them!
Mr. Mamoru Taguchi was born in Sapporo in 1938. His hometown is home of one of the best boiler equipment companies in Hokkaido. After graduating from university, he helped run the boiler repair business at home. In 1972, he started roasting at his own house and visited many coffee producing countries to learn the cultivation and extraction techniques of coffee beans. He is a leading theorist in the coffee industry in Japan. Since 2009, he has been the chairman of the Specialty Coffee Association of Japan (SCAJ).
Mr. Taguchi puts his theory into practice in “Café Bach”, a café he runs in Tokyo. He provides and instructs the younger generations on coffee knowledge, and also brews high-quality coffee for the guests.
Those who love specialty coffee will always visit “Café Bach” as a pilgrimage to Japan to enjoy a cup of specialty coffee. Of course, because of Mr. Taguchi's advanced age, the chance of seeing him brewing coffee is rare.
Mr. Mamoru Taguchi perfectly demonstrates the Japanese craftsmanship. He has been pursuing high-quality coffee for more than 30 years, and he has kept improving his coffee knowledge and skills every day. He is indeed the legend of the Japanese coffee industry.
