The distinctive flavours of these Ethiopian coffees remain timeless and captivating. For many, Ethiopian coffee marks the beginning of their journey into the world of specialty coffee. This particular batch is sourced from the Danche Washing Station, which gathers cherries from 742 farmers cultivating 1-2 hectare plots at elevations of 2000-2300 meters above sea level.

The name "Diima," meaning "red" in the native Oromiffa language, perfectly captures the coffee's vibrant character, evoking notes of intensity, wine gums, violets, and tropical fruits like mango and banana in every cup.

Danche Washing Station

Nestled in the highlands of Chelbesa, Danche, stands as a testament to exceptional coffee production. Owned by our esteemed partners at SNAP COFFEE and proudly certified organic, this station sources premium cherries from approximately 400 dedicated farmers. These farmers, cultivating their crops on fertile soils at altitudes ranging from 2000 to 2300 meters above sea level, benefit from ideal growing conditions and advanced farming practices, with individual farm sizes averaging 1 to 2 hectares.

The high altitude not only contributes to the unique and distinctive flavor profiles that Danche is renowned for but also results in a later-than-usual harvest season. This extended maturation period allows the cherries to develop superior quality and complexity.

The experienced team at Danche Washing Station brings a wealth of knowledge in agronomy and agriculture, enabling them to innovate and refine processing methods continuously. This expertise and commitment to excellence ensure that each batch of coffee from Danche is nothing short of extraordinary.

The coffee from the late 2023 harvest reveals delightful notes of blackcurrant and rosehip, combined with a persistent and bright acidity. This makes it an excellent choice for a filter coffee or a lively espresso, showcasing the finest qualities of Kenyan coffee.

Brew Guide

We highly recommend trying this coffee with the Origami Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.

  • Coffee: 15 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
  • Water: 240ml (85°C)
  1. Rinse the filter thoroughly with hot water.
  2. Start the timer and gently pour 30 grams of water over 30 seconds.
  3. At 30 seconds, pour in a circular motion until you reach 120 grams.
  4. At 1:00, continue pouring until you reach 160 grams.
  5. At 1:20, continue pouring until you reach 200 grams.
  6. At 1:40, pour until you reach 240 grams.

The total brew time should be between 2:20 and 2:30 minutes.

Returns

Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.

Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.

If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.

*To be eligible for a return, the item must be unused and in the same condition as received, including its original packaging.

The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.

For other reasons, the buyer is responsible for returning the product at their expense.
