Bright tangerine, warm nutty aromas, caramelised apple sweetness, and a full dark-chocolate body. Grown by the Churupampa community in northern Peru and roasted in Rotterdam.
Finca Churupampa represents the long-term dedication of the Tocto Bermeo family and the coffee-growing communities surrounding Chirinos in Cajamarca. Formally established in 2011, the project has developed from a family farm into a producer network supporting nearly 190 families by 2024 through agronomic training, quality control, and diversified farm development. Shokunin’s current lot comes from La Lima, where a small group of closely connected families works together to produce a coffee defined by consistency, depth, and distinctive Peruvian sweetness.
Processing
Coffee for Shokunin’s current Churupampa lot is grown in the La Lima community at approximately 1,700–1,800 m.a.s.l. It undergoes a fully washed process with two fermentation stages, each lasting between 12 and 24 hours. This careful approach gives the cup brightness and definition while preserving the dense sweetness and substantial body for which Churupampa is known.
Taste Profile
Churupampa offers a rich and reassuring profile with a lively edge. Bright tangerine lifts the aroma, while warm nutty tones give the cup depth. As it cools, a rounded sweetness reminiscent of caramelised apple develops, leading into a full and lingering dark-chocolate body. The result is balanced, comforting, and particularly well suited to filter brewing.
