This exquisite coffee hails from La Sirena farm in Quindío, Colombia, where the visionary Juan David Puerta, a former food engineer, has revolutionised coffee production.
Leaving behind his engineering career, Juan David embraced a scientific approach to coffee cultivation and processing. In 2021, after countless experiments, he perfected a groundbreaking processing technique that consistently delivered unparalleled cup profiles. This innovation earned him second place in a prestigious South Korean competition, catapulting his reputation as an industry trailblazer and forever changing the Puerta family's legacy.
Fueled by his success, Juan David founded Sens Coffee, seeking passionate coffee enthusiasts and partners who share his vision to introduce his extraordinary coffee to every corner of the globe.
Processing
This coffee undergoes a honey process, beginning with the careful selection of cherries at their peak ripeness. The cherries are then floated in tanks to remove any less dense ones. Following this, the coffee is fermented for 48 hours in closed tanks, pulped, and washed before being placed in sealed containers.
A unique touch is added before fermentation: a special mixture prepared by boiling oranges, peaches, and lemongrass in syrup. This mixture initiates an osmotic dehydration process for 70 hours, imparting distinctive flavours to the coffee.
The drying process, which typically spans eight days depending on weather conditions, involves placing the coffee on concrete patios and turning it every four hours to ensure uniform drying. Once the moisture content reaches 11%, the coffee is stored in GranPro bags or similar containers and kept in a cool environment, preserving its exceptional quality and flavour.

Brew Guide
We highly recommend trying this coffee with the Flower Dripper, using either Abaca Paper or Medium Dark Roast Paper Filter, to fully explore its unique flavour spectrum.
- Coffee: 15 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
- Water: 250 grams (90°C)
- Brewing Ratio: 1:16.6
- Rinse the filter thoroughly with hot water.
- Start the timer and gently pour 30 grams of water over 30 seconds.
- At 30 seconds, pour in a circular motion until you reach 100 grams.
- At 1:00, continue pouring until you reach 150 grams.
- At 1:25, pour until you reach 200 grams.
- At 1:50, gently pour in a circular motion until 250 grams, avoiding any agitation.
The total brewing duration should be between 2:30 and 2:40 minutes.

Returns
Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.
Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.
If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.
*To be eligible for a return, the item must be unused and in the same condition as received, including its original packaging.
The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.
For other reasons, the buyer is responsible for returning the product at their expense.
