This Shokunin-exclusive washed coffee is produced by Ana Restrepo, a fourth-generation coffee producer from Vereda Totoró in Sevilla, Valle del Cauca. After returning to her family’s farm, Ana began working with Shokunin to improve quality step by step. The result is a balanced and well-structured Colombian coffee, combining mellow sweetness, red-fruit character and comforting chocolate depth.
Processing
This lot is fully washed and fermented for 14 hours. The process creates a clean and balanced cup, allowing its smooth sweetness, ripe fruit character and rounded body to remain clearly defined.
Taste Profile
Sweet and mellow aromas reminiscent of marzipan lead into smooth honey-like sweetness and notes of ripe red apple. A full, weighty body brings dark-chocolate depth, followed by a balanced and comforting finish.

Brew Guide
We highly recommend brewing this coffee with the ORIGAMI Dripper, using either Abaca Paper or Medium-Dark Roast Paper Filter, to explore its balance of honeyed sweetness, red fruit and chocolate depth.
- Coffee: 18 grams (medium coarse, K-Ultra: 8.5°; J-Ultra: 300°)
- Water: 300 grams (92°C)
- Brewing Ratio: 1:16.6
- Rinse the filter thoroughly with hot water.
- Start the timer and gently pour 30 grams of water over 30 seconds.
- At 30 seconds, pour in a circular motion until you reach 110 grams.
- At 1:00, continue pouring until you reach 170 grams.
- At 1:30, pour until you reach 240 grams.
- At 2:00, gently pour in a circular motion until you reach 300 grams, avoiding unnecessary agitation.
The total brewing duration should be between 2:40 and 3:00 minutes.

Returns
Within the EU, you can return any order* within 14 days (14-day cooling-off period) without providing a reason, and you will receive a full refund, inclusive of the shipping cost to an EU destination.
Beyond the initial 14 days, you may typically request a partial or potentially full refund. Our return policy spans 30 days, accounting for holidays. Please note that shipping costs will not be refunded in such cases after 14-day cooling-off period.
If 30 days have passed since your purchase, regrettably, we cannot offer a refund or exchange.
*To be eligible for a return, the item must be unused and in the same condition as received, including its original packaging.
The seller will cover the cost of return postage only if the item is damaged, faulty, or doesn't match the listing description.
For other reasons, the buyer is responsible for returning the product at their expense.
